Ingredients
  

  • 1 tbsp brazil pesto
  • 2 tbsp lemon juice
  • ½ cup sun dried tomato oil
  • 2 tbsp olive oil
  • 1 tbsp salt
  • ½ tbsp black paper
  • 1 cup pasta
  • ½ cup artichoke hearts
  • ½ cup sun dried tomato
  • ½ cup Kalamata olives
  • ½ cup capers
  • ½ cup scallions
  • ½ cup parsley
  • ½ cup arugula
  • ½ cup parmesan
  • ½ cup pine nuts

Instructions
 

  • Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and rinse under cold water to stop the cooking process. Let it cool completely.
  • take a medium size of jar and add to brazil pesto - 1 tbsp & lemon juice - 2 tbsp
  • add to olive oil 2 tbsp. sun dried tomato oil - ½ cup tbsp salt black paper - ½ tbsp and fully stire very well. Adjust seasoning to taste.
  • take a large size of bowl add to pasta -1 cup artichoke hearts - ½ cup sun dried tomato - ½ cup
  • add to Kalamata olives - ½ cup capers - ½ cup scallions - ½ cup
  • add to parsley - ½ cup & arugula - ½ cup & parmesan - ½ cup
  • finally add to pine nuts prepared liquid And then mix well now the pasta salad is ready to serve

Notes

  • Firstly, take any shape of pasta of your choice. However, pasta salad tastes great when prepared with elbow penne.
  •  Add vegetables of your choice like lettuce, blanched broccoli, olives and cucumber.
  • Also, instead of mayonnaise, you can use hung curd. I prefer to use eggless mayonnaise as they are creamier and tastier.
  • finally, pasta salad tastes best when served cold.
  • Adding ranch dressing sauce enhances the flavor of pasta salad
