First we need a cooker to make Kabuli Pulao. Put the cooker on the gas and turn the gas to low heat and now add two spoons of cooking oil. Then add one and a 1¼ cup of chopped onions. Stir slowly. After the onion turns brown, add a teaspoon of chopped garlic.
Add 500 grams of meat (lamb) and then let the mutton cook for a while then add one and a 1½ of salt and ½ of cumin seeds.
Then add a ¼ of black pepper and add ½ cups of water. Now turn off the cook until tender.
To make basmati rice, firstly soak three bowls of rice in water and clean it thoroughly. Soak basmati rice in water for at least 30 minutes before cooking. Now take a large pan or a bowl and add two jugs of water and Now add two teaspoons of salt and allow the water to boil properly, then drain the soaked rice and put it in the boiling water. Add a few lemon drops to help the rice stay loose. Let it cook for 10-15 minute.
Take a frying pan and add oil and roast the grated carrots on low heat. Similarly, roast the raisins for 30 minutes until the caramelized.
To make the syrup to give the pulao a sweet taste, make the syrup by adding 1 tbsp of water and 1 tbsp of sugar in a pan.
To make a special kabuli pulao masala, crush three black cardamom seeds and 1 cardamom seed 4 cloves into a fine powder and add roasted cumin powder half teaspoon.
Now take a big pan to combine all the ingredients in a pan and make a layer of rice in it followed by a layer of cooked meat. Now again layer rice.
Now pour the prepared syrup over it. Then sprinkle the Kabuli Pulao Special Masala. Garnish with roasted carrots.
Now garnish with roasted raisins. And now sprinkle two spoons of butter and cook on very low flame for 20 minutes.
